Frozen Durian for China: A Processing Buyer’s Specification

Specify frozen durian for Chinese processing and foodservice buyers with clear product forms, ingredients, sensory trials, packaging and lot evidence.

A frozen durian specification for China should describe the ingredient the customer will actually use. A bakery, beverage producer and retail-pack distributor can all request frozen durian while expecting very different products. Clear requirements reduce unsuitable samples and make the eventual quotation easier to evaluate.

Choose the processing form and cultivar

Specify frozen whole fruit, segments, seeded flesh, seedless flesh or puree as appropriate. Identify the cultivar and origin independently. If a blend is permitted, describe the blend instead of presenting it as a single-variety product.

State whether the buyer requires intact pieces, a particular consistency or a product suitable for further processing. Ask the manufacturer to identify the processing and packing facility. The trading business shown on the quotation may be different from the establishment responsible for production.

Obtain the full product and ingredient description

Request the ingredient statement, processing description at an appropriate level, net content and manufacturer’s storage and use instructions. Confirm whether anything has been added and whether the proposed product matches the sample.

Have the importer verify the applicable China registration and import requirements for the specific form. The 2026 changes summarized in the SFA circular on GACC Decree 280 are a reason to review older processed-food checklists rather than copy them unchanged.

Design a useful sensory and application trial

Use the customer’s intended preparation method. Record portion size, thawing or processing steps and the interval before assessment. Compare samples under the same conditions so one supplier does not benefit from a different preparation process.

Assess the attributes relevant to the application: flavor, color, texture, consistency and undesirable material. If the product will be baked or mixed with other ingredients, test that use rather than judging only a spoonful of thawed fruit. Keep the trial records with the product code and batch identifier.

Define food-safety evidence with qualified reviewers

Ask the manufacturer and importer which microbiological, residue, contaminant and other requirements apply to the product. Specify the report scope and sampling basis. Avoid treating an unrelated certificate or a report from another lot as evidence that the current shipment was tested.

A specification should also say how non-conforming or inconclusive results are handled. Identify the person authorized to release the lot. Complete the review before dispatch when the result is a condition of purchase.

Match the pack to the production line

A bulk pack may fit a factory but be difficult for a small outlet to portion. State the inner and outer pack weights, sealing method, lot marks and pallet or carton arrangement. Check how the customer stores, opens and uses the pack under its approved procedure.

For whole-fruit offers, compare the usable ingredient obtained after preparation. For prepared flesh or puree, compare usable product under the same recipe. Use actual trial yields rather than a promised universal conversion from whole fruit to flesh.

Frequently asked questions

Does an attractive yellow color prove cultivar or quality?

No. Appearance is one attribute. Confirm identity through supplier records and assess the full specification and intended-use trial.

Can freezing replace food-safety controls?

No. Frozen storage does not by itself establish a validated kill step or a safe ready-to-eat product. Follow the manufacturer’s intended use and the buyer’s approved food-safety program.
