Red Dragon Fruit for Fresh-Cut Portions: Calculate Edible Yield
Calculate usable red dragon fruit flesh and finished portions from a controlled trial before comparing whole-fruit offers.
For a kitchen buying red dragon fruit, the useful purchasing unit may be a finished portion rather than a kilogram of whole fruit. A yield trial connects the two. It should measure the buyer’s actual peeling and trimming process without presenting the result as a fixed characteristic of every future lot.
Define the endpoint before weighing
Decide what counts as usable flesh: cubes of a specified size, intact wedges or another preparation. Write the trimming rule and the treatment of irregular but sound pieces. Keep food-safety rejection separate from shape losses. Use a clean preparation area and the operator’s approved procedure; a yield exercise must not encourage unsuitable fruit to enter production.
Track the mass through the trial
Weigh the sampled whole fruit, then record peel and unavoidable trim separately from rejected flesh. Weigh the final usable output before adding other ingredients. Use the same cutting method and trained operator conditions when comparing lots. Also record preparation time, because a slightly higher yield may require substantially more labour.
Make the arithmetic visible
An illustrative 10 kg input producing 6.5 kg of acceptable flesh has a 65% usable yield. At a planned 130 g portion, that output represents fifty portions before any later service loss. These are demonstration figures, not a yield promise for red dragon fruit. For a cost comparison, divide the fruit purchase cost by the actual usable output, then add preparation and packaging costs on the same basis.
Use the trial to refine the brief
Repeat with additional samples if the first result appears unusually good or inconsistent. Keep the fruit size, maturity observations and lot reference with the yield sheet. Ask HAFAMEX about a trial quantity and the desired size range, and explain the portion format so that the buying discussion focuses on the kitchen’s usable result.
