Red Dragon Fruit for Puree: Write a Processing Brief

Define the raw-material and trial requirements for red dragon fruit puree without confusing fresh fruit with a finished ingredient.

“Red dragon fruit for puree” can describe whole fruit intended for processing or an already processed ingredient. Those are different purchases. Before requesting a price, state which form is required and who is responsible for peeling, processing, packing and validating the finished product.

Separate raw fruit from finished puree

For whole fruit, the brief should identify soundness, flesh type, size needs for the equipment and the agreed receiving evaluation. For finished puree, ask for the processor’s product specification, ingredient declaration, treatment, packaging and storage instructions. Do not assume a fresh-fruit quotation includes a food-processing service or a validated shelf life.

Design a trial around the final application

A smoothie base, a dessert filling and a visible fruit sauce can need different texture and colour behaviour. Test the sample in the actual recipe at a fixed inclusion rate. Record whether seeds are retained, how coarse the preparation is and whether other ingredients alter the result. Keep trial batches identifiable so that changing the recipe is not confused with changing the fruit.

Keep quality and safety responsibilities clear

A fruit that misses a cosmetic retail preference is not automatically suitable for processing. The receiver must still apply its food-safety acceptance procedure. Ask the processor to define testing, handling and product-release responsibilities for the intended ingredient. Codex’s pitahaya standard concerns fruit supplied fresh to consumers and excludes industrial-processing fruit; its scope should not be stretched into a puree specification.

Request the offer that matches the task

Prepare a brief listing product form, intended recipe, trial amount, acceptable texture and required supporting documentation. Send HAFAMEX that brief and ask which form can be discussed for the actual order. Confirm capability and supply details before writing them into a customer proposal or finished-product label.
